Drying morels
The drying technology consists of the following stages:
1. Acceptance of fresh mushrooms at purveyors.
2. Clearing mushrooms of extraneous inclusions, scrap rootlets, wiping of mushrooms kapron rag for removal of sand and dirt (is categorically forbidden to wash mushrooms before drying).
3. Sorting mushrooms according grades
4. Drying of mushrooms
5. Package and storage of mushrooms.
Grades
For morels
The fresh mushrooms sort on 2 categories -
1 - the whole young mushrooms with a cap's diameter - from 2 up to 5 ñì, without leg
2 - the whole mushrooms with a cap's diameter - up to 6 ñì, legs' sizes are not regulated
The mushrooms of both categories are dried wholly.
The dry mushrooms should be without mould and extraneous smells, not worm-eaten, not burnt, not rotten, easy, to the touch dry, slightly to bend, at some effort to break. The cap's colour is from light yellow and yellowish-grey up to brown, the flesh's colour is from white up to light yellow. It is not supposed bitter and another not of smack, typical of the given mushroom. The impurity of mushrooms of other kind is not supposed. The humidity of dry mushrooms should be a maximum 12 %. The saved radio-activity should not exceed 600 ÁÊ/KG hour. The contents of the injured mushrooms - no more than 2 % broken and crumbs - no more 1 %.
The contents of organic impurity of a vegetative origin - no more than 0,1 %, mineral impurity no more than 0,5 %.
For morels
The fresh ñòðî÷êè used for drying, should have intact or a little bit injured cap, the cap's diameter should not exceed 7 cm., the leg's height should not exceed 3 cm.
The mushrooms are dried wholly.

Packing
Package of mushrooms in container occurs on demand of the buyer, on container there should be a marks of the goods, which includes the following:
· the Name of the manufacturer
· the Name of production (is desirable in Russian and latin language)
· Term of manufacturing
· Grade (if not sorted that is underlined "not sorted")
· of net Weight
· of gross Weight
Storage
Dried mushrooms are very much fragile, therefore it is necessary to store them in dry, pure, well aired rooms, it is desirable with constant temperature. At sharp fluctuations of temperature the mushrooms can dampen and mould. The storage of dried mushrooms on ground or near to fresh vegetables, fruit, berries, nuts and salty production is not supposed. To store mushrooms it is necessary in paper bags or cardboard container. The storage in polyethylene packages is not supposed.
